Mint Chocolate Chip Cheesecake. In a large bowl, whip the cream cheese with an electric hand mixer. Add the peppermint extract and the mini chocolate chips and fold them in just until combined.
Pour cream cheese mixture into baking pan. Add in the sugar and continue to beat until the sugar is incorporated. Mix coated mini chocolate chips into cream cheese mixture.
Give it a stir with a spoon to make sure the crumbs are coated in the butter.
Mix together the cake mix and oil.
Mix - Add the powdered sugar and peppermint extract, and beat on low until it has combined. Fold in the whipped cream and the green food colouring. Once the cream cheese is smooth and creamy add in a cup of heavy cream and a cup of powdered sugar.
