Matcha Green Tea Cake. Add the the remaining sugar and mix well. Pour equal amounts through a sieve into two mixing bowls.
Beat the butter and sugar with an electric mixer until pale and smooth. Add the sifted dry ingredients, in a few batches, to the creamed butter. Cream the butter with half of the sugar until the butter mixture turns light and pale in color.
If using the glaze: Beat ingredients together and drizzle on cake.
In a large bowl, whisk together the Greek yogurt, eggs, applesauce, vanilla extract, stevia extract, and almond extract.
In a separate bowl, combine the flour, matcha green tea powder, baking soda and salt. Whisk the ingredients and bake slowly in the oven. Whisk together the milk and oil, and add to the dry ingredients.
